Norwegian Blessing

May da ruts always fit da wheels in your pickup
May yur ear mufs always keep out da nort wind.
May da sun shine varm on yur lefse.
May da rain fall soft on yur lutefisk.
And until we meet again,
May da Good Lord protect ya from
Any and all unnecessary Uff Das.
“Love you more”
--Nana Shirlene
Note: lefse is a thin, soft Norwegian flatbread: leftover mashed potatoes, work in a little flour, roll it out flat, and cook in a skillet. It is more substantial than a crepe; more delicate and chewy than a flour tortilla. Either spread with butter, sprinkle cinnamon and sugar, roll it up to eat—or can put on some deli meat and cheese for a savory.

Note: lutefisk is made from aged stockfish (air-dried whitefish), or dried and salted cod, pickled in lye. It is gelatinous in texture after being rehydrated for days prior to eating. Lutefisk is prepared as a fish dish of several Nordic countries.

Note: Uff Da is a Norwegian exclamation or interjection expressing bafflement, surprise, or dismay.
